Banana Oatmeal Pancakes

Pancakes healthy enough to eat every day?  Turn your weekday bowl of oatmeal into a breakfast with Sunday morning vibes.  These wholesome pancakes are naturally sweetened with banana and a touch of honey plus eggs to get your protein in. 

Recipe adapted from Modern Honey


  • 1/2 cup Almond Milk Unsweetened
  • 3 Eggs
  • 1 Ripe Banana
  • 2 Tablespoons Honey
  • 1 1/2 cups Rolled Oats 
  • 2 teaspoons Baking Powder
  • 1/4 - 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Cinnamon 


  1. Blend almond milk, eggs, banana, honey, vanilla, rolled oats, baking powder, and salt until smooth.
  2. Heat 1 Tbsp oil or butter in a skillet over medium heat.  Pour 1/4 cup pancake batter into each pancake. 
  3. Cook for 2-3 minutes. Flip and cook for 1-2 minutes on the other side.
  4. Serve hot with your favorite toppings.  Sliced bananas, berries, and a drizzle of maple syrup, honey, or peanut butter are all delicious choices.
